How to Make Buffalo Chicken Pizza With Blue Cheese

This recipe for Buffalo Chicken Wing Pizza is one that a friend shared with us. They have an annual hockey game with the after party at his house and family are welcome…it is great to see everyone but also his food is amazing! So, when he offered to share some of his recipes with me, I had to say yes…
When you take a bite into this Buffalo Chicken Pizza, it tastes just like you are biting into a chicken wing. Seriously. I can't believe how much it tastes like a chicken wing! It is so good.
We love having pizza night in our house once a week. This pizza is a favorite one to make along with our White Pizza and Supreme Pizza. It is nice to mix it up a little with different types of pizzas.

This pizza takes a little time in the kitchen to make, but it is easy to make. And once you have a bite of it, you will be so glad you made it! It is better than pizzeria pizza!
Grocery Shopping List:
- chicken breast
- pizza dough
- blue cheese dressing (we use Ken's Blue Cheese)
- shredded mozzarella cheese
- shredded Asiago cheese
- grated Parmesan cheese
- hot sauce (we use Frank's hot sauce)
- butter
- spices you will need: celery salt, garlic powder, ground cayenne pepper, ground cloves, nutmeg, onion powder and salt
- chives to garnish, optional
For the pizza dough: I have been buying my pizza dough at our favorite pizzeria lately. It is reasonably priced, good dough and it saves on time. If you have a favorite pizza dough recipe, use that one instead of buying it.
How to make Buffalo Chicken Pizza:
You will need to cook the chicken before making the pizza. Place the chicken in a baking dish and cook it in your oven at 400 degrees for 20 minutes.
Take your dough out of the refrigerator and place it on the counter to warm up a little while the chicken in cooking. The dough will stretch out easier for you if it is warmed up a little.
Once the chicken is cooked, let it cool slightly and then cut it up into small cubes. Set the chicken aside.
How to make the chicken wing sauce:
This chicken wing sauce is what makes this pizza so delicious!
While the chicken is cooking, make the chicken wing sauce. In a bowl, combine all the seasonings together. Melt your butter and whisk it together with the seasonings. Once everything is mixed well, set that aside.
Each pizza will use three tablespoons of the chicken wing sauce plus the hot sauce. How much hot sauce you add to the chicken wing base depends on how spicy you like your food.
The hot sauce addition will determine how spicy your pizza will be. One tablespoon of hot sauce for mild, two tablespoons for medium and three for hot.
Once you have the hot sauce mixed in with the three tablespoons of chicken wing sauce, pour it over the chicken and mix until all the chicken is coated with the sauce.
You will have extra chicken wing sauce. The recipe makes a batch of the sauce that will be good for more than one pizza. How many pizzas you get out of the sauce recipe depends on how much you use on each pizza.
Store the extra sauce in your freezer. Pour any extra sauce into a freezer/microwave safe container and place it in the freezer. When you want to use it next time, place the container in your microwave and heat it up. Heat at 20 second increments, stirring after each one, until it is a liquid. Refreeze any extra chicken wing sauce.
How spicy do you want your pizza?
Here are the three different ways you can prepare your chicken wing sauce for your pizza:
- For a mild flavored sauce, use 3 tablespoons chicken wing sauce and one tablespoon hot sauce.
- To make your pizza medium flavored, use 3 tablespoons chicken wing sauce and two tablespoons hot sauce.
- And, for the hottest sauce, use 3 tablespoons chicken wing sauce and three tablespoons hot sauce.
How to prep and bake the pizza:
Adjust your oven temperature to 450 degrees and grease your pan with butter. The pizza will come out of the pan much easier if you grease you pan.
Spread your pizza dough out evenly into your pizza pan or baking sheet. You don't need to use a rolling pin for the pizza dough. Rolling out the dough can make the dough dense and tough. Just use your hands to pull and stretch out the dough.
Using my hands I press the dough out, working from the center, towards the edges of the pan. Check out this post as it has some great tips for working with pizza dough.
Once you have your dough spread out in the pan, par-bake the dough.
What is Par-Baking the dough?
Par-bake means to partially bake the pizza dough. Par-baking the dough is good to do with this recipe since this is a heavy pizza and it will make sure the dough is cooked all the way through.
To par-bake it, bake the dough only for 7 minutes and then take it out of the oven to add the pizza toppings. Once the pizza ingredients are all set, place it back into the oven and bake 8 additional minutes.
After the dough is par-baked:
Once the pizza dough is par-baked, spread the blue cheese over the pizza crust as your sauce for the pizza.
Then add the chicken that is coated with the sauce to the pizza, placing it over the blue cheese evenly.
Sprinkle parmesan cheese over the chicken, enough to soak up the sauce.
Then sprinkle your asaigo and mozzarella cheeses over the pizza.
Place it back into the oven and cook for 8 minutes. The edges will be slightly brown and the cheeses melted once the pizza is done. Let it sit in the pan for five minutes. If you like, sprinkle some chives over the pizza.
Then run a knife around the edges and use a spatula to get it out of the pan. I like to cut the pizza on either a large cutting board or plate so I don't scratch up my pan. And using a good, sharp pizza cutter makes it so much easier to slice the pizza.
When we make the pizza, we usually make one pizza mild for my daughter and I, since we prefer less heat. We make a second one with the medium sauce for my husband and son who like a spicier pizza.
We have leftovers since we make two pizzas but that is okay because this is a favorite recipe in our house! Cover the leftover pizza tightly and refrigerate any leftovers. To warm it up, use either your microwave or toaster oven or oven.
Since I am a native of Buffalo, recipes like this are what we make when we have parties or big sport weekends like the Superbowl, hockey playoffs, etc. Chicken wings go with pizza…that is just how it goes here in my hometown.

Buffalo Chicken Pizza
Delicious homemade pizza made with a blend of cheeses, chicken, and a homemade chicken wing sauce . Perfect for a twist on pizza night or for watching the game!

- ¾ lb. chicken breast, cooked
- 1 pizza dough (purchased from your local store or pizzeria or using your favorite dough recipe)
- ¼ cup blue cheese dressing (I use Ken's Blue Cheese)
- 1 cup shredded mozzarella cheese
- ½ cup shredded asiago cheese
- Parmesan cheese, grated
- 1-3 tablespoons hot sauce (I use Frank's hot sauce) The amount of hot sauce you use depends on your desired amount of spice (see recipe notes)
- chives to garnish, optional
Chicken Wing Sauce
- 2 teaspoons celery salt
- ½ tablespoon garlic powder
- ¾ teaspoon ground cayenne pepper
- ½ teaspoon ground cloves
- ½ tablespoon nutmeg
- ½ tablespoon onion powder
- ¾ teaspoon salt
- 1 cup butter, melted

Cook the chicken breasts in the oven at 400 degrees for 20 minutes. Once slightly cooled cut into small pieces. Take the pizza dough out of the refrigerator and set out on the counter to warm up a little while the chicken is cooking.

While the chicken is cooking, make the chicken wing sauce. To make the chicken wing sauce, combine all seasonings in a medium sized bowl and mix well. Add the melted butter to the spices and whisk together. You will need three tablespoons of this chicken wing sauce per pizza. The extra sauce can be stored in the freezer.

After chicken is cooked, adjust your oven temperature to 450 degrees.

In a small bowl combine three tablespoons of the chicken wing base sauce and the hot sauce. Add one tablespoon of hot sauce for mild, two tablespoons for medium and three for hot. Pour over the chicken in a bowl and mix until all the chicken is coated with the chicken wing sauce.

Butter your pizza pan or baking pan. Using your hands, spread out the pizza dough evenly in your pan. Par-bake the dough for 7 minutes at 450 degrees.

Remove the pizza dough from the oven and spread blue cheese on your pizza dough as you would your pizza sauce.

Spread the chicken over the pizza crust evenly. Sprinkle the parmesan cheese over the chicken, enough to soak up the sauce.Sprinkle the asiago and mozzarella cheeses over the pizza.

Bake at 450 degrees for 8 minutes or until the edges of the crust are slightly brown and the cheeses are melted.

Let the pizza sit for 5 minutes. Run a knife around the edges and use a spatula to get it out of the pan. Sprinkle with chives, optional. Cut and serve.
